
Online Travel Vietnam: Ca chot is a very popular fish dish in the Mekong Delta, especially during the rainy season.
Ca chot often live in rivers or canals near the sea in the brackish water.
When the rain comes, ca chot move to rice fields to lay eggs. So it is not until the seventh or eighth month of the lunar year that farmers often catch ca chot to made food.
In the tenth lunar month when the dry season comes, ca chot moves to rivers and locals use bamboo traps or small fishing nets to catch them.
The fish can be made into many kinds of tasty dishes, with one in particular called ca chot kho sa ot (braised ca chot with lemon grass and chili) a real delta classic.
To make the dish, you have to cut off the fish head, stomach and take out the eggs before cleaning it up and mixing it with pepper, garlic, fish sauce and sugar for about ten minutes.
Then put the ingredients into a pot with a little water and onto a small fire. Slice the chili with lemon grass and pour into the pot; when the water becomes thick slip in some oil. To add to the dish you can steam some young tamarind leaves with fermented rice into a very tasty soup that delta visitors would be wise to try.
